The Longganisa Lucban (P85) is crisp outside and chewy inside. You can also have it in pasta (P95) or on pizza (P135). Their Pancit Habhab (P75) is authentically salty and is best eaten with a dash of Suka sa Sasa, which dilutes the saltiness and gives the dish a sour edge. Try the Doña Aurora, a family recipe of stuffed egg meatballs, a kind of embutido lite. It's got a sweet-savory taste, the neutrality of the egg white giving the meat mixture a surprising depth.
